Why this recipe works

A dessert that does a protein shake's job

Blended cottage cheese is the secret here. Once it's whizzed with cocoa and a little maple syrup it turns completely smooth, with a texture somewhere between mousse and pudding and no hint of cottage cheese.

It's the dessert we recommend most to people trying to eat more protein. It feels like a treat, but each glass has 24g of protein, about the same as a protein shake.

Ten minutes with the blender and half an hour in the fridge is all it takes.

260 calories

Rich enough to feel indulgent, light enough for any day of the week.

No cooking

A blender and 30 minutes in the fridge is all it takes.

Make-ahead friendly

It keeps for three days, so dessert is ready whenever you are.

Make it yours

Ingredient swaps

Use what's already in your kitchen. Here is how each swap changes the dish.

Mocha version

Add 1 tsp of instant espresso powder.

Less sugar

Use a zero-calorie sweetener instead of maple syrup to save about 30 calories per glass.

Skyr instead of yogurt

Skyr is even thicker and adds a little more protein.

Any berries

Strawberries, cherries or a few slices of banana all work as toppings.

Meal prep & storage

Dessert, ready when you are

Make it at the weekend and a high-protein dessert is waiting in the fridge.

3 days

In the fridge

Covered in the fridge, it keeps for up to 3 days.

Top last

Serving

Add the raspberries and chocolate just before serving so they stay fresh.

Lolly molds

Freezing

Frozen in a glass it turns icy, but poured into lolly molds it makes a great frozen treat.

2 glasses

Portioning

The recipe makes two generous glasses, about 200 g each.

Recipe tips

Texture

Blend longer than you think

One to two minutes, scraping down the sides, is what makes it completely smooth.

Texture

Use a high-speed blender

A stick blender works too, but blend for longer.

Flavor

Add a pinch of salt

It makes the chocolate taste richer and deeper.
